Dinner Dilemmas

Tonight I decide to make an actual meal, yes I know it is a rare thing. I am trying to get us off of our Fast Food diet. I make salmon with a cranberry sauce and asparagus with a garlic dijon sauce. Sounds good and fancy, right? Well actually I have a Weight Watchers 5 Ingredients in 15 minutes or less cookbook, so it isn't that fancy. Ethan eats a container of raspberries, Chloe eats a turkey sandwich, Lauren skips dinner all together and Zak's not home and he wouldn't have eaten it anyway. I had a delicious meal to myself- many plates of not so cheap salmon are thrown in the garbage. My dilemma is this, do I only make them mac and cheese for the rest of their lives or try to at least introduce them to other foods? Aaah the many joys of motherhood!

believe it or not...yours truly has been cooking up a storm lately. i found a cookbook at marshall's that i LOVE! "the everything basic cookbook for beginners". SO EASY AND YUMMY! (but probably not as healthy as the weight watchers book). i say heck w/mac & cheese. at my house its "eat it, or starve!"

Oh, how I can relate. Mac & cheese is requested daily at my house. The other morning I woke up and Troy had fixed it for Hope for breakfast. I must have given him "the look" and he said, "What??? Some battles just aren't worth fighting." Amen to that!

Epicurious.com, baby! They compile all the recipes from Bon Appetite, Gourmet, Food & Wine, etc. What you can do is go find a VERSION of what your kids like, and make the gourmet (and healthier) version.

I loves me some mac & cheese myself, but if you can find recipes that achieve the same results, but with healthier ingredients, you're golden! My ex-stepmom (Netty) used to cook us gourmet meals every night and not only was it food that Colin and I would even consider eating (we're both picky), but it was delicious AND healthy. Here are some links:

Pizza (especially fun when they can put what they want on it):
